We used Fermentation-Simulation. Recreating the scent of alcohol without the stinging smell of ethanol carrier is difficult. We used a blend of natural fruit esters and heavy lactones to mimic the mouthfeel and "burn" of a sip of rum, creating a physical sensation in the nose that feels warm and expansive.
